| Soy sauce | 2 tsp | |
| Mirin | 2 tsp | |
| Salt[Diamond Crystal kosher salt assumed throughout.] | to taste |
Directions

Whisk Eggs with Dashi, Soy sauce, and Mirin, then strain the mixture.
4mDivide Shiitake mushroom between cups and pour in the custard base.

Cover and steam gently until the custard is barely set and smooth.

Finish with Green onion and serve warm.
