Basic Chawanmushi

Dashi egg custard, steamed gently in cups.

Soy sauce2 tsp
Mirin2 tsp
Salt[Diamond Crystal kosher salt assumed throughout.]to taste

Directions

  1. prep

    Whisk Eggs with Dashi, Soy sauce, and Mirin, then strain the mixture.

  2. Divide Shiitake mushroom between cups and pour in the custard base.

    Cover and steam gently until the custard is barely set and smooth.

    Finish with Green onion and serve warm.
