Orange-braised pork shoulder, crisped in its own rendered fat.

| Orange juice | ½ Cup | |

| Lard | 50 g | |
| Salt[Diamond Crystal kosher salt assumed throughout.] | to taste |
Directions

Cut Pork shoulder into 5 cm chunks. Season generously with Salt and Cumin.

Place pork in a wide heavy pot with Lard, Orange juice, smashed Garlic, and enough Water to come halfway up the pork. Bring to a boil, then simmer uncovered until the liquid evaporates and the pork begins to fry in its own fat.

Once liquid evaporates, let the pork fry in the rendered fat until golden and crisped. Transfer and pull apart into chunks.
