Curtido

Lightly pickled cabbage and carrot slaw.

Red cabbage½ lb
Carrots¼ lb
Red onion50 g(≈ ½ small)
Apple cider vinegar¼ Cup
Dried oregano½ tsp
Sugar2 tsp
Salt[Diamond Crystal kosher salt assumed throughout.]to taste

Directions

  1. prep

    Finely shred Red cabbage. Julienne or coarsely grate Carrots. Thinly slice Red onion.

    Toss with Salt and let stand 10 minutes, then squeeze out excess moisture with your hands.

    Dress with Apple cider vinegar, Sugar, and Dried oregano. Toss well and rest at least 15 minutes before serving.
