| Cilantro | 3 tbsp | |
| Lime juice | 1 ¼ tbsp | |
| Salt[Diamond Crystal kosher salt assumed throughout.] | to taste |
Directions

Peel and dice Mango into 1 cm pieces. Finely dice Red onion and Jalapeño. Chop Cilantro leaves.

Toss everything with Lime juice and Salt. Serve within an hour for best texture.
