Directions

    Crack Eggs into a bowl. Add Salt, Water, and Black pepper, then stir only a few times so visible ribbons of white and yolk remain.

    Melt Unsalted butter in a pan over medium-low heat. Add the eggs and push them into broad, soft folds, preserving the marbled streaks.

    Remove from the pan while the curds are still glossy. Finish with Green onion if using.
