| Ketchup | 3 tbsp | |
| Vegetable oil | 1 tbsp | |
| Eggs | 4 large | |
| Unsalted butter | 21.3 g(≈ ¼ sticks) | |
| Salt[Diamond Crystal kosher salt assumed throughout.] | to taste |
Directions
cook
Cook diced Chicken thigh and Onion in Vegetable oil. Add Cooked rice and Ketchup, then stir-fry until evenly coated.

Beat Eggs with Milk, Salt, and Black pepper.

Melt Unsalted butter in a nonstick pan over medium-low heat. Pour in half the beaten eggs, stir once or twice as the bottom sets, then tilt the pan so the loose egg fills any gaps.
3massemble
When the omelet is glossy on top but stable at the edges, spoon half the ketchup rice across the center. Fold both sides of the egg over the rice, slide onto a plate seam-side down, and repeat with the remaining eggs and rice.
