Quick-pickled red onion in apple cider brine.

Salt[Diamond Crystal kosher salt assumed throughout.]to taste

Directions

    Slice Red onion as thin as possible, by hand or with a mandoline.

  2. Bring Water, Apple cider vinegar, Sugar, and Salt to a simmer, stirring until dissolved. Pour the hot brine over the onions.

    Cool to room temperature, then refrigerate for at least 30 minutes before using. Keeps for 2 weeks.
