Quick-pickled red onion in apple cider brine.

| Sugar | 1 tbsp | |
| Salt[Diamond Crystal kosher salt assumed throughout.] | to taste |
Directions

Slice Red onion as thin as possible, by hand or with a mandoline.
3mBring Water, Apple cider vinegar, Sugar, and Salt to a simmer, stirring until dissolved. Pour the hot brine over the onions.
3mrest
Cool to room temperature, then refrigerate for at least 30 minutes before using. Keeps for 2 weeks.
