| Salt[Diamond Crystal kosher salt assumed throughout.] | to taste |
Directions

Dice Roma tomato into 5 mm pieces. Finely dice Red onion and Jalapeño, removing seeds for milder heat. Roughly chop Cilantro leaves and tender stems.

Combine everything in a bowl. Add Lime juice and Salt, toss, and rest 5 minutes for the tomatoes to release their juice.
