Soy sauce1 tsp
Mirin2 tsp
Sugar1 tsp
Vegetable oil1 tbsp
Salt[Diamond Crystal kosher salt assumed throughout.]to taste

Directions

  1. prep

    Whisk Eggs with Dashi, Soy sauce, Mirin, and Sugar until smooth.

    Brush the pan with Vegetable oil. Cook the egg mixture in thin layers, rolling each layer before adding the next.

    Rest briefly, then slice crosswise while warm.
